Once a year, this South Philly restaurant prepares the rich spring soup from which it takes its name. Native to the province of Teramo, Italy, traditional le virtù uses approximately 49 different ingredients, made of a combination of the last of winter's stores of beans, pastas and cured meats and the season's first fresh veggies.
